Vegetarian meals can be pretty simple. Yesterday, I went shopping with my boyfriend because I told him that I have not much money left to last the end of the month. Not surprising, I have overspent this month due to some unforeseen weather conditions that made me spend more than I have budgeted.
So, we went to Econsave. I got me some vegetables that can last for a whole week. The moment I got home, I started chopping up 1/3 of a cucumber, 1/2 a piece of tofu and 1/3 of chili. The photo above is the result of this chopping. It took less than 5 minutes.
Then I prepared some rice. Washed them and put them into the rice cooker with water. This was pretty fast too.
This morning, I only need to add a few drips of oil and soy sauce, put them into the rice cooker steamer section and cook them all in the rice cooker. By the time I finished shower and my morning routine, the rice was ready.
Usually, I may also put in some goji berries to add on to it, but the weather these days is scorching, So I left the berries out.
This, ladies and gentlemen, shall be lunch. As I bought supplies for a whole week, I shall share each day what I prepared for easy references for any aspiring vegetarian who wants a quick and easy to prepare meal.
NOTE: Cucumbers are full of water. When you steam or cook them in anyway at all, do remember this. It will be helpful to prevent the dish from becoming too "wet". I only put a few drips of oil and soy sauce, yet by the time the dish is cooked, half the plate is covered with sauce becauuse of the water from cucumbers.
