Today is the lunar 11th month 17th day, according to the calendar it should be the Amitabha Buddha's enlightenment day. I surely must be a vegetarian on this day and also to share my merits to all beings for an equal Buddhahood in Western Pureland.
Hence, my lunch today is a non-conventional vegetarian mix. Nobody mixes this way, because there had always been a particular way of cooking these dishes separately, but I did it my way.
Let me introduce to you the first ingredient called Lady's Fingers. No, am not eating my own fingers. It is another name for Okra, the one with lots of vitamins and benefits especially with a reputation for those with diabetes. Last night, boyfriend shared with me his favorite version of the okra, which is to steam it first, then add on soy sauce with fried garlic. I like that version, except that I don't have any garlic and I am not taking garlic anyway. Garlic makes me feel heated up. Another version that my mom usually makes is to steam it together with the soy sauce and some oil. I like this too, but to be honest, I like the soy sauce more each time.
So, instead of these two ways of cooking, I decided to do it my way. I washed the okra, put in the frozen mixed veggies and add on chopped mustard. In the morning when I cook the rice, I steam these in a plate added with water.

It was an easy victory for me in the kitchen today. Lunch was delicious, with the okra dominating the dish to bring out its taste while the other ingredients added to the fragrance along with the little bit of rice that I had. I surely will do this again as it is easy to make and I love lady's fingers a lot.
See, cooking is just that easy. Even for a lazy bum like me. We shall speak again tomorrow for yet another new ingredient in the dishes. Happy evening!
