Today is a pretty remarkable day for me as I slept for only 5 hrs 45 minutes and still feeling so energetic. Last night I had a vegetarian dinner with my colleagues, and while it is vegetarian, they cooked it with oil, salt and sugar...and lots of artificial meat. These things provide a lot of carbs, which fueled me until past midnight despite my need for sleep.

The carb from last night reduced my need for breakfast, but I had to have some food in the morning to allow for some medications. Nothing serious, I just sprained my neck sleeping on a pillow that is not suitable for me. Had been hurting for almost a year, not dead yet, but it refused full recovery which made me decide on asking the doctor for medicines.

Anyway, staying up late gave me the privilege of preparing for today's lunch. I still have 2 tomatoes, 3 potatoes and 1.5 carrots in my week's supply.

With my single knife, I skinned and cubed them all into a pot.

Then I added water to fill to the top of the pile, and covered the pot. This had helped prevent the potatoes from turning black and had given the opportunity for the water to penetrate right through every fibre of the ingredients.

This morning, all I needed to do was to turn on the stove to a slow fire to boil them all. After shower, the water was boiling beautifully and I just turned off the stove. This big portion had allowed me to have both breakfast and lunch, and the soup was also contained in a flask for me to drink as tea in the afternoon.

I will definitely do more of this next time. Food with tea. I am so pleased with my own creativity, but this is only possible because I cooked without meat, oil, salt and sugar.
